Flesh-Food Industries: Requirements and Contributions

Abstract

rncnus? If so, it is limc to broaden your thinking in order to undcrsland Meat Science and
the role of flesh-food industries in the nutrition of Nigerians. Mcat is defined as the flesh
(i.e. tissues) of animals which are suitable for use as food (Price and Schweigert, 1971; Forrcst
N ol., 1975; Lawrie, 1979). All processed or manufactured products which might be prepared
from these tissues are included in this definition. It is true that while nearly every species of
animal can be used as meat, the majority of the meat consumed by Nigerians comes from
domcstic animals and aquatic organisms.
