Abstract

The technologies for canning cowpea in both continental and assorted traditional recipes were developed. The products developed includes canned cowpea in brine, canned cowpea with tomato sauce, canned cowpea with fish in tomato sauce, cowpea and Irish potato with tomato sauce, canned cowpea and fried yam with tomato sauce canned cowpea and plantain with tomato sauce, canned cowpea in continental sauce, canned cowpea with sweet corn, as well as some traditional soups like canned egusi and mushroom soup, canned bitter leaf soup etc.
