Recovery and Utilization of Palm fruit Sludge in Food Preparations

Abstract

The palm fruit sludge was recovered after mashing, slurring in water and removal of the oil that floated on top of the water. The fibre and the kernel were filtered off and the liquid palm mill effluent dewatered, dried, milled, sieved and packaged. Analysis of the pulp showed that it contained 2.3% moisture, 4.8% crude protein,63.5% crude fat, 0.75% ash, 15.5% crude fibre (which is part of total carbohydrate) , 28.63 total carbohydrate and, 600 mg/ 100g β- carotene.
